Wings Menu

This is the menu with quantities that was used for Wings. There were ~25 people at this event.

Friday (quick easy) dinner

  • Quesadillas!

    • Omnivores (also gf)

      • Corn tortillas (70 med size)

      • Black beans ( 2 cans)

      • Mixed cheese ( 1 large bag (10 cups) )

      • Chicken (if budget permits) ( 6 breasts)

    • Vegan

      • Chipotle hummus (3 containers) (also for snacks)

      • Vegan cheese (1 package)

Saturday Breakfast

  • Hash (Vegan and GF)

    • Apples (10 small/medium)

    • Sweet Potato (20 lrg)

    • Sage (7 tbsp)

    • Garlic powder (3.5 tsp)

    • Oil (5 tbsp)

  • Oatmeal

    • Steel cut oats (around 30 servings)

  • Nuts

  • Dried fruit

  • Brown sugar

  • coconut

  • milk (+almond)

Saturday Lunch

  • Corn and Wild rice chowder (GF and Vegan)

    • Oil (5 tbsp)

    • Carrots (15)

    • Rice (wild rice if budget permits) (20 oz)

    • Vegetable broth (could use bullion) (30 cups)

    • Onion (5)

    • Garlic (5 tsp)

    • Bell peppers (2 cups)

    • Nutritional yeast (left out for GF peeps) (1.25 cups)

    • Unsweetened almond milk or creamer (5 cups)

    • Corn (probably frozen) (5lb + 5 cups)

  • Garlic bread

    • 3 c. grated parmesan cheese

    • 1/3 c. dried oregano

    • 1/3 c. dried parsley flakes

    • 1 c. butter or margarine, softened

    • 3 cloves garlic, minced

    • 1 c. vegetable oil

    • 6 loaves French bread, cut into 1/2 inch slices

    • 6 lb. mozzarella cheese, shredded

Saturday dinner

  • Meatful lasagna

    • Noodles (3lbs) (no boil?)

    • Italian sausage (5 lbs)

    • Ricotta (2 quarts)

    • Eggs (6)

    • Mozzarella (2lb)

    • Parmasean (1lb + some for salad)

    • Pasta sauce  (14 cups total,vegan)

  • Cruelty free  lasagna

    • Use above sauce

    • Noodles (12)

    • Firm tofu 14 oz

    • nutritional yeast ( 2 tablespoons)

    • bell peppers (5)

    • Garlic 1 bulb cloves

  • GF Version

    • Gf noodles ( 1 small container)

    • Above sauce

    • Cheese if wanted

  • Salad

    • Romaine Lettuce (6 bunches)

    • Croutons (2 packages)

    • Oatmeal leftovers


Sunday Morning

  • Muffins (15 or so)

  • GF carb option (muffins, bagels etc) (1 or 2)

    • Grapes (3 bags)

    • Leftovers from snacks

Snacks

  • Sandwich Bread (4 loaves)

  • Gluten Free Bread (1 loaf)

  • Nutella ( 2 jars)

  • PB + J (1 jar of each)

  • Nuts (mixed, large)

  • Oreos ( 2 packages)

  • Snack Crackers (giant thing of goldfish or cheezits)

  • Corn chips (1 large bags)

  • Salsa + Guac (also can be used for Fri night quesadillas) (3 containers of each)

  • Veggies and dip (2 platters)

  • Fruit

    • Apples (10)

    • Pears (10)

    • Banana (20)

    • Oranges (10)
